Spicy Shrimp Topping for Caesar Salad

It takes less than 20 minutes to prepare this shrimp for your Caesar salad. I like to top my Caesar salads with shrimp. This recipe is for 4 servings, but you can cut it in half when making salad for 2. Prepare your Caesar salad as you normally would including the dressing.

2 dozen (21-count) shrimp, peeled and deveined
olive oil for sautéing
¼ cup diced red bell peppers
¼ cup sliced green onions
1 tbsp minced garlic
1 tbsp fresh chopped tarragon
1 tsp red pepper flakes
¼ cup white wine
salt and cracked black pepper to taste and 1 teaspoon cajun seasoning

Sauté bell peppers, green onions, garlic, tarragon and red pepper flakes 3–5 minutes or until vegetables are wilted over medium high heat. Add shrimp and sauté an additional 3 minutes or until shrimp turn pink and begin to curl. Deglaze with white wine. Using a slotted spoon, remove shrimp from skillet and place on top of Caesar salad.
